P411: Using an interdisciplinary course about “food” to inspire both our science and non-science students to face the challenges of their twenty-first century world.

The Twenty-First Century will pose many challenges for our students.  Our series of Twenty-First century Issues courses are designed to give our students an opportunity to see the connectivity of our world’s “science” problems from a multi-disciplinary approach.  In designing the first two courses of this series, one about “Water” and one about “Food”, around three connecting knowledge areas  –  the science, the ethics, and the practical  –  our goals are to provide students the tools to be able to understand various viewpoints, to have the students begin to trust themselves to seek answers, and to inspire students to come away from our course with the mindset that no problem is too large to do something about.
